“Cheezy” Hemp Dressing

With so much to do, and so little time, I find adding small touches to easy familiar meals is the best way to stay healthy and not be stuck in the kitchen ALL DAY.
Enter this simple dressing that can be added to main meals such as grilled chicken or to a simple salad. You could even use it as a dip!
If you haven’t used hemp seed before, it is an amazing little seed (and no it won’t get you stoned!) It’s full of protein and when you process or blend it, it turns creamy and light.
Hemp is renowned for its nutritional properties. Its high in complete protein (yep all 8 essential amino acids) meaning it is a great option for vegans. Its high in fiber and high in essential fatty acids – omega 6 and 3 (and comes in the right ratio for your health too!) and is a good source of B vitamins. This is the brand that I purchased in Australia. And…if all that wasn’t enough, hemp seed is grown sustainably in Australia so its better for the environment than say flaxseed or chia seed which may be imported meaning it has further to travel to get to your plate.
- 1/4 C Sunflower Seeds
- 1/2 C Hemp Seeds
- 1/2 C Water (or more)
- 2 TB Nutritional Yeast
- 2 TB Lemon Juice (approx 1 small lemon)
- 1 Garlic Clove
- 1/4 tsp Salt
- 1/4 C Parsley
- Optional - 1/2 C Zuchini
- 1. Blend all ingredients in the processor
- 2. Add more or less water to get it to the desired consistency
- 3. Taste and then chill until ready to serve
- Makes about 2 cups of dressing so store what you don't use in the fridge for the rest of the week.
