Coconut & Chocolate Protein Pudding

Since I don’t eat high allergy, processed foods, that means toast and cereal are off the menu. So what does one do when they need a quick, nutritious breakfast that will help you get through your day?
Answer: You make this Coconut & Chocolate Protein Pudding!
‘Pudding for breakfast? What’s next…steak?’ I hear you cry. Well…yes, why not. Remember the old saying – ‘eat breakfast like a king, lunch like a prince and dinner like a pauper’? First and foremost, I believe in eating a nutritious breakfast so I can get through my day and therefore both this pudding and steak are perfectly acceptable breakfast options.
You see when you cut out processed food and refined sugar, you very quickly learn that having dinner for lunch, lunch for dinner, and dessert for breakfast are quite acceptable. There really are no restrictions to what time you eat a certain meal, its more important to consider the nutrition you are providing your body than what the clock dictates as an appropriate meal.
This breakfast pudding can be made the day prior as it only gets better and thicker once chilled. Its convenient because you can serve it in a mason jar with a lid and take it in the car or bus (or unicycle) with you to eat as you travel to work. All of that, and it’s full of good fats to fuel your body and help reboot your system.
AND…this recipe has added protein to keep you fuller for longer as well as helping to regulate your blood sugar levels. That…and its bloody tasty.
I made mine using 180 Nutrition Coconut protein powder which gave it a lovely thick texture but without giving it that chemical flavour of a lot of other protein powders on the market. You could really use any protein powder that you have on hand, but make sure your product is as close to natural as possible, without the fake sugar, colourings and definitely no MSG. And if you can get a protein powder with grass fed whey protein, even better.
Personally I only use 180 nutrition (and no, I am not getting paid to say that). It has a soft grainy and nutty texture as opposed to a lot of powders that resemble flour with a bleach white tone (kind of a hint that it contains nothing REAL in it…HELLO!). It also smells delicious.
Now for those of you who turn your nose up at adding avocado to a pudding, don’t be so “judge a book by its cover”. Lets just pretend that the avocado isn’t even there. Once you blend it together you won’t be able to see it or smell it. So strap on your adult shoes for a few minutes and be brave enough to look around and try new things. I know you won’t regret it because you won’t even be able to taste the avocado. Promise!

- 1 Avocado, peeled and seed removed
- 1 Banana, ripe
- 1/8 tsp Cinnamon
- 2 TB 180 Nutrition Coconut Protein Powder
- 1 tsp Vanilla Extract, Pure
- 1 TB Cacao Powder
- Optional toppings - coconut, cacao nibs, nuts, a banana slice
- 1. Blend all ingredients in the food processor
- 2. Taste - if you need it sweeter (you ole sweet tooth you!), add 1/2 tsp of raw honey or Rice Malt Syrup
- 3. Place into a nice travelling cup and place into the fridge
- 4. It will thicken slightly on chilling
- 5. Serve topped with cacao nibs, shredded coconut and a banana slice
- A nice and thick pudding for your breakfast, cram packed full of protein and good fats to give you long lasting energy for your morning.
