There is something about chilli and vegetables in a muffin that I just can’t say no to! It gives a normal everyday muffin that extra lift that you’ve been wanting without needing extra time in the kitchen. It also has a nice amount of cheese which I don’t usually add to my muffins, but I think with all of the nutrition in these guys already, a little extra cheese is warranted! I made mine with only half of the sausage as I am not a huge fan of the flavour of the texture of sausages. You can also try to substitute with bacon if you prefer.
Only five ingredients and you can make these with or without egg. I personally like them with the addition of the egg, but for those of you who dislike eggs, this recipe is for you! Oh so fluffy!
I love the idea of using avocado in baking and this recipe calls for a small amount of avocado so the after taste is subtle but still present. Try them out!
So elegant and so delicious. These muffins are again grain free, but full of antioxidants from the berries. The sweetness comes from the berry but the texture and added crunch from the macadamias is to die for!
These muffins were adapted from a Martha Stewart recipe and are cram packed full of goodness and healthy veggies. Perfect for emptying your fridge from slightly wilted forgotten produce.
6. Egg Muffins
They guys are great for making ahead of time as they can be kept in the fridge for a few days and are super easy to reheat. They are easy, tasty and quick! One would say perfect yes? You tell me…
These muffins are sweetened with applesauce and have added apple cider vinegar which gives it a lovely light texture without the heavy, carb loading from regular flour and regular sugars. Delicious. I used toasted pecans on mine and they were a smash hit!
They sound so naughty, but they are so nice. Is it even possible? This recipe uses chestnut flour but I substituted with half coconut flour and half almond flour and the recipe was just lovely.
With a fun quiz and some fast facts on the nutrition of a banana, how could you go wrong? Fun, tasty and easy to make. Happy days.
I love the concept of using cauliflower in everyday recipes. Its one of those vegetables that seems to get overlooked because of its bland flavour. But the lack of flavour means you can use this vegetable is so many recipes. Ahar…its perceived weakness, is actually its strength! Go figure. Try these out for sure!
Try them out and let me know which is your favourite. Or even better, make your own recipe and let me know what you create!
